Use oil to start a steak and butter to finish it. Oil handles the high pan temperature needed for a strong crust; butter contributes flavour and carries aromatics during the lower-temperature basting stage.
Start with a thin film of oil
Dry the steak thoroughly and season it before cooking. Heat a heavy pan, then add a small amount of neutral, refined oil with good heat stability. The oil should coat the contact area without pooling deeply.
Place the steak in the pan once the oil is shimmering. Good browning depends on a dry surface, firm contact and enough heat to drive the Maillard reaction. Butter added at this stage can burn before the crust develops because its milk solids brown quickly.
Add butter after the initial sear
Once both broad sides have browned, reduce the heat and add butter. As it foams, add garlic, thyme or rosemary if desired. Tilt the pan and spoon the aromatic butter over the steak.
The foam shows water leaving the butter. Keep it moving and watch the colour: hazelnut-brown butter is flavourful, but black milk solids taste bitter. If the pan remains violently hot, pull it briefly from the burner before adding butter.
Does oil stop butter burning?
Adding oil does not fundamentally change the temperature at which butter’s milk solids burn. The mixture may appear more forgiving because the solids are diluted and the pan is often cooler by the basting stage, but temperature control remains the real protection.

What about clarified butter?
Clarified butter and ghee have had most water and milk solids removed, so they tolerate higher heat than whole butter. They can be used for the initial sear while still contributing buttery flavour, although the flavour differs from fresh foaming butter.
The practical sequence
Sear with a neutral oil, lower the heat, add whole butter and aromatics, then baste briefly. Rest the steak after cooking so its temperature evens out. The two fats are not interchangeable stages: each is being used for the physical property it handles best.
