Banana bread is one of the safest recipes for replacing oil with butter. Mashed banana already supplies moisture and tenderness, so the loaf can absorb the change from liquid oil to butter without becoming fragile. Butter also pairs naturally with banana, brown sugar, vanilla and warm spices.
Convert the amount
For an exact fat match, divide the oil weight by 0.80. A recipe using 100 g oil needs 125 g butter. Half a US cup of vegetable oil weighs about 109 g, giving an exact butter result of roughly 136 g.

Use melted butter
Most oil-based banana breads use a simple muffin method: wet ingredients are combined, dry ingredients are combined separately, and the two are folded together. Preserve that method by melting the butter and cooling it slightly.
Mix the butter with the mashed banana, sugar and eggs. If cold ingredients make the butter form small solid flecks, the loaf will usually still bake correctly, but bringing eggs and banana closer to room temperature produces a smoother batter.
Moisture and keeping quality

Flavour and browning
Butter adds dairy richness and milk solids that encourage browning. The crust may colour earlier than the oil version, so check the loaf before the original recipe’s maximum time. If the top is dark while the centre is still wet, cover it loosely with foil and continue baking.
Browned butter is an excellent variation, but it is not a neutral substitution. Browning evaporates water and concentrates the fat. If you brown the butter, weigh it after browning and add a small amount of water or milk to replace what evaporated.
Avoid overmixing
Butter brings water to the batter, which means slightly more opportunity for gluten to develop. Fold only until no dry flour remains. Overmixing is more likely to toughen the loaf than the choice between oil and butter itself.
