Replacing oil with butter in cake is usually possible, but it changes more than flavour. Oil stays liquid at room temperature, while butter firms as the cake cools and brings water and milk solids into the batter. The best result comes from matching the fat first, then choosing a mixing method that suits the recipe.
The conversion to use
For an exact fat match, divide the weight of the oil by 0.80. One US cup of vegetable oil weighs about 218 g, so it needs 272.5 g of standard butter. For everyday baking, the easier rule is to use about 1.25 times as much butter as oil.
Use the oil to butter converter when the recipe gives an unusual amount. If it uses a familiar cup measure, the conversion chart gives both quick and exact answers.
Melted or softened butter?
If the recipe pours oil into eggs, milk or another liquid, use melted butter. Let it cool until warm before mixing so it does not cook the eggs or split the batter.
Do not automatically switch to the creaming method. Beating softened butter with sugar incorporates air and changes the structure of the cake. That can be useful in a recipe designed for creaming, but it is not a neutral replacement for liquid oil.
What changes in the cake
Butter gives a richer aroma and more browned, caramelised notes. The crumb may feel slightly firmer once cool because butterfat crystallises. Oil-based cakes often stay softer for longer, particularly when refrigerated.
The water in butter can also affect gluten development and evaporation. In a forgiving loaf cake or traybake, the difference is usually welcome. In a highly calibrated sponge, changing the fat can alter lift and tenderness enough to require testing.
Cakes that tolerate the swap well
- Chocolate cakes, where butter reinforces cocoa and vanilla
- Banana and spice cakes with naturally moist batters
- Carrot cakes when a slightly firmer crumb is acceptable
- Simple loaf cakes and traybakes
- Cakes served at room temperature rather than chilled
Be more cautious with chiffon cake, oil-based genoise variations and recipes built around an exceptionally soft refrigerated crumb. The substitution is still possible, but it stops being a simple one-variable change.
Practical method
Weigh the butter, melt it gently and let it cool. Mix it with the liquid ingredients exactly where the oil would have gone. If the batter becomes visibly thicker than usual, a small spoonful of milk can replace some of the moisture lost during melting, but avoid adjusting before you see the actual consistency.
The conversion preserves fat contribution. It does not guarantee an identical cake, because oil and butter behave differently after the number has been calculated.
